The influence of temperature, pH and the continiouns of extraction on the accumulation of soybean trypsine and chymotrypsine inhibitors from white let soybeans was learned. It has been observed that temperature does not have a significant influence on the process and the maintenance of inhibitors in the alkaline solution is 1,5 times greater than in the acid solution. The conditions for the industrial manufacture of soybean inhibitors has been selected.
