Ultrasound-assisted extraction of inulin from Jerusalem artichoke tubers was established to allow process caring out at milder conditions and whether raw decomposition was required then in common cases. Optimal solid-water ratio (1:12 to tubers dry weight) and temperature of extraction (60 ºС) was selected. Optimal concentration of activated charcoal essential for extract clarification was 10 g/l. It was showed, that ultrasound-assisted acid hydrolysis of Jerusalem artichoke pulp can de applied for utilization of wastes of process concerned and vegetable carbohydrate-protein fodder production.
