Effect vegetable oils of on the regions of the existence and properties of lecithin organogels and liquid crystals in the system lecithin - vaseline oil - water is studied. Olive oil and avocado oil were chosen as vegetable oils, and phospholipid concentrates “Moslecithin”, Lipoid S75 and Lipoid PPL400 were used as lecithin source.
