IMMOBILIZATION OF PROTEOLYTIC COMPLEX OF CRAB HEPATOPANCREAS ON HITOZANCONTAINS CELLULOSE CARRIERS IN THE PRESENCE OF GLYCEROL

The kinetics of the interaction dialdehydecellulose and chitosan solution with proteolytic complex of crab hepatopancreas (PC) in a liquid medium . It has been established that the primary interaction with the enzymes studied PC polysaccharide carriers occurs within 1 hour. Chitosan stabilizes (θ ˂ 1) PC on drying and storage, and use a modified polysaccharide carriers destabilize (θ ˃ 1).
